Who doesn't love fried rice (Nasi Goreng)? This Indonesian signature dish is indeed a favorite. However, for diabetics or those on a strict diet, fried rice is often a "forbidden menu" due to its high calorie and sugar content from white rice and sweet soy sauce (kecap manis).
But don't worry, you no longer need to hold back your appetite.
By replacing the main ingredient with Corn Rice Dailymeal, which has a low Glycemic Index (GI), you can serve delicious fried rice without the guilt. It tastes savory, has a fluffy texture, yet is much healthier.

Ingredients (For 2 Servings)
Main Ingredients:
- 2 plates of cooked Corn Rice Dailymeal (preferably day-old rice or cold rice so it's not mushy).
- 100 gr chicken breast (diced) or peeled shrimp.
- 1 chicken egg (beaten).
Spices/Aromatics:
- 3 cloves garlic (finely chopped).
- 4 cloves shallots (thinly sliced).
- 2 red curly chilies (adjust to taste).
Vegetables (Must-haves for fiber):
- 1 carrot (small diced).
- 1 stalk scallion (sliced).
- A handful of green beans or sweet corn kernels.
Seasoning (Healthy Version):
- 1 tbsp diet sweet soy sauce (low sugar/tropicana) or just a little regular sweet soy sauce.
- 1 tbsp oyster sauce.
- 1 tsp sesame oil (optional for aroma).
- Salt and pepper to taste.
- 2 tbsp olive oil or coconut oil for sautéing.
Instructions
- Prepare the Pan: Heat olive oil over medium heat. Pour in the beaten egg, scramble it, then set aside on the edge of the pan.
- Sauté Spices: Add garlic and shallots. Sauté until fragrant and softened.
- Add Protein & Veggies: Add the diced chicken/shrimp and carrots. Sauté until the chicken changes color and the vegetables are half-cooked.
